Backing up servers - server recovery

For data, we use a combination of external hard drives and backup tapes (nightly backups on weekdays).

Testing shows that we can recover data (restore it and access it) which is good...

But...

What about recovering entire servers?

We have a couple Windows 2008 servers. I do a full server backup to external hard drive (weekly).

What I would like to do is increase disk capacity on a server in another building of our "campus" and perform full server backups to this location.

Running the full server backups once a week to external hard drive while I do something else in the meantime is not *that* big a hassle but I'd like to automate so it would take place at night, once a week or even each night, to the remote location. If we can ever obtain the additional disk space (budget freeze after budget freeze, seems like relatively simple things can be so difficult to obtain).

Then someone recommended offsite backup - to another geographical location, not to another building 200 yards away, but miles away.

(Backup sets are currently stored in fireproof safes, one set in Building 1, another in Building 2).

The link between the two buildings is 1 Gigabit.

Upload speed on the Internet link is 1.5 Mbps (download 12 Mbps - on paper).

Uploading data on a link like that would be incredibly slow (full nightly backup is currently around 40 GB).

What kind of bandwidth would you need for entire servers?!!

Is anyone here backing up entire servers to offsite storage?
