Shadow copies exist, but no previous versions listed anywhere

This is going to sound a lot like many other VSS questions, but my VSS were working just fine for years and then they weren't.

We have had VSS on for years on our two main file servers.  They are currently Server 2008r2 systems and we haven't been having any issues.  Today one of our users says they can't get any previous versions.  Lo and behold, neither can we. 

The GUI for configuring Shadow copies reports that they have been collected for the last month and a half (2x/weekday).  A "vssadmin list shadows" on the cmd-line gives us a big list as we would expect.  However, trying to see previous versions on any system gives us a big, fat "There are no previous versions available".

The only entries in the system logs for VSS or VSSAudit going back two years are IDs 8224 (Idle Timeout).  All systems have File and Print sharing bound to their local area connection.  All systems have Administrative shares enabled.  Most (if not all) the workstations that have looked for previous versions are Win7x64.

We have no idea how long this has been going on, but the systems have been up and essentially unchanged for 110 days. The only change at that last reboot was security patches.
