Windows Server Backup failing with Error 8078010D "Enumeration of the files failed" when backing up Hyper-V VHD drives

This has been a pain in my side for the past two weeks as I've tried troubleshooting step one after another with no solution in sight.

I currently have a server running Windows Server 2012 with two Hyper-V virtual machines. The server is set up in the following way:

Main Server (Windows Server 2012 Standard)
- Virtual Server 1 (Windows Server 2012 Essentials)
  - OS Virtual HD 1
  - Data Virtual HD 1
- Virtual Server 2 (Windows Server 2012 Standard)
  - OS Virtual HD 2
  - Data Virtual HD 2

The Hard Drive layout on the server is set up as:
C: - OS
D: - Virtual Machine Profiles and Virtual HDs (except Data Virutal HD 1)
E: - Data Virtual HD 1
F: - External USB Drive (for backups)

I've been trying to get Windows Server Backup to do its job and backup the server including the virtual machines. Unfortunately, like others, I keep getting the following error:

Backup of volume E: has failed. Backup failed as shadow copy on source volume got deleted. This might caused by high write activity on the volume. Please retry the backup. If the issue persists consider increasing shadow copy storage using 'VSSADMIN Resize ShadowStorage' command.

Error in backup of E:\ during enumerate: Error [0x80070003] The system cannot find the path specified.

Sometimes the above error includes the D: Drive as well.

Looking over the forums, I've tried several things. This includes:
- Restarting Server
- Changed external drive from being dedicated to WSB (not visible in Explorer) to standard drive (visible in Explorer).
- Removing the CyberPower PowerPanel UPS software
- Changing Shadow Storage on E: Drive to UNBOUNDED
- Installed any optional Windows Server 2012 update available through Windows Update

At this point, I'm out of ideas. Not having a back up of the server is definitely not a comfortable feeling. Are there any other recommendations? Should another backup software be used instead? Any suggestions would really be appreciated.
