Does Snapshot Restoration destroy newer data?

Last week we two of our server 2012 virtual machines went down.  During the process of diagnosing and attempting to get them running again, a snapshot was restored on the VM which acts as a file-server.  Because the snapshot was somewhat out of date, I wonder if the restoration process physically wipes/deletes any data which was created after said snapshot.

If the data is not physically wiped/deleted but rather is inaccessible through normal means, is there a way for me to recover any or all of what was lost?

To answer your initial question, no, there is not a backup of this particular VM's data.  We're a small organization which has experienced some significant turnover in IT, and none of my predecessors set up any regular or organized plan of backups for this shared file and data server.  Needless to say, this is my first priority going forward.
